The Chai, The Cellar

The Cellar, the family secret

In a cellar, built in 1899 at the foot of the centuries-old Beaune ramparts, Jérôme has the title of director but acts more like the benevolent family father watching over the grapes from the birth of the young buds to the bottling of the wine.

The wine making process takes place in stainless steel vats to preserve the fruit of the Pinot Noir whereas the ageing is done in French oak casks and half-hogsheads giving the wine its complexity. You will enjoy, glass in hand, the subtlety of all our wines.
